Slow Cooker Chicken Chili

Ingredients

  • 1 tsp olive oil
  • 2 skinless, boneless chicken breast halves
  • 2 cups chicken broth
  • 1 14.5 oz can diced tomatoes
  • 1/2 yellow onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 Tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp mustard powder
  • 1 Tbsp unsweetened cocoa powder
  • 1/2 tsp garlic powder
  • 1 pinch salt
  • 1 dash hot sauce
  • 1 15 oz can black beans
  • 1 15 oz can cannellini beans
  • 1/2 cup plain Greek yogurt

Instructions

  1. Spread olive oil over the bottom of slow cooker. Place chicken in slow cooker.  

  2. Mix all remaining ingredients except beans and yogurt. Place in slow cooker and cook for 6 hrs on low.

  3. Remove chicken and shred with a fork. Return to slow cooker and add beans. Stir, then cook for 30 more minutes on low.

  4. Stir in yogurt just prior to serving.
